Pour milk first for a decent tea cup

London, June 24 - It is essential to pour the cold milk into the cup first, adding the hot tea afterwards, to prevent the milk reaching a temperature at which its proteins break down, Britain's Royal Society of Chemistry reported Tuesday.
In other advice on brewing the perfect cuppa, Andrew Stapley of Loughborough University said it was essential to use soft water, to warm the pot before filling and to allow the tea to brew for three minutes.
He recommended loose-leaf Assam tea and advised drinkers to sup at between 60 and 65 degrees centigrade "to avoid vulgar slurring".
The revelations, made at the RSC headquarters in central London, were timed to coincide with the centenary of the birth of George Orwell, a dedicated tea drinker who liked his beverage Mahogany-brown and was quite happy to pour the milk in afterwards.
